Quince, pear, grape and lemon – extremely elegant, delicious fruit aromas, delightful acidity, refined barrel notes and salty, mineral finish. Strict yield control of vines. Spontaneous fermentation and barrel aging.

Winemaking: we harvested on several occasions from early September to mid-October. Pressed in traditional basket press. After settling the must it fermented spontaneously in the barrel and was kept on fine lees until the end of May.

Alcohol: 13.6%

Titratable acid: 6.6 g/l

Sugar free extract: 21 g/l

Residual sugar: 3.4 g/l

pH: 3.11

Total sulphur dioxide: 95 mg/l
